Celiac Disease & Gluten-free Diet

Celiac disease is an autoimmune disorder caused by a reaction to gluten, a protein found in wheat, rye and barley that contribute to the viscosity of baked products. There is no cure for the disease, but it can be controlled through strict avoidance of foods that contain gluten.

Most gluten-free products are alternatives to traditional grain-based goods, including bakery products, pastas, and cereals. These are made with alternative grains and flours, such as rice, corn, amaranth and quinoa.

In Canada, a gluten-free diet is defined by the Canadian Food Inspection Agency as a diet free of wheat, rye, oats and barley.

At the same time, there has been a surge in the number of consumers choosing a gluten-free diet for other perceived health benefits. Sufferers of a wide variety of maladies, including autism, attention deficit disorder (ADD), irritated bowel syndrome, and multiple sclerosis (MS), have come to believe a gluten-free diet will provide relief.
